Karie's Salmon Cakes

This recipe was a creation from our 3 month kayak trip. We used ingredients that we just happen to have with us in the kayak. Of course many substitutes can be used, so use whatever you have in the kitchen. Make it your own creation! It's a great way to use up leftover or smoked salmon! (Sorry, next time I make this, I will update the portions)

3 Cups Leftover or cooked Alaska salmon or lightly smoked salmon
1 1/2 Cups Pancake mix or Flour
One egg, only if not included in pancake mix
1 1/2 Cups Veggies, corn, carrots, broccoli, zuccini, peas, spinach, or whatever you like
Green, yellow, white or red Onions
Sun dried tomatoes
Water
Salt & Pepper to taste
Olive oil

Soak sun dried tomatoes to rehydrate. Cut tomatoes, onions, and veggies into very small pieces. It may be easier to grate some veggies. Mix salmon, pancake mix and veggies together in a bowl. Add water until the mixture sticks together. The pancake mix is what holds the mixture together, so add more if neccessary. The mixture should be able to form patties or balls. Add salt and pepper to taste. Place patties into a hot pan with olive oil. Cook until golden brown on both sides. Serve with veggies or make a sandwich or burger with it.
