Ivory King/Chinook Salmon (1lb.) |

Ivory King is just like the Red King except that it is Ivory in color. Salmon turn orange due to what they eat, such as shrimp and kreel. Some salmon decide not to eat these things and stay Ivory in color. It has the same richness of Omega-3 oils as the Red King, but is slightly milder tasting. It's my personal favorite! Coho Salmon portions (also known as Silvers) are available! These portions are a little smaller thatn the King portions, but are ideal for family and single meals. | The second most abundant Alaska Salmon species is Sockeye. The distinct, deep red flesh retains its color throughout cooking, and brings dramatic impact to any presentation. Sockeyes are known for their rich flavor. The average weight is approx. 6 lbs and they can grow to almost 3 feet in length. Sockeye's are suitable for grilling, broiling, sauteing, baking, poaching, steaming, and smoking. |

Characteristics
The Ling Cod is a voracious predator, feeding on various large fishes, crustaceans, and mollusks from Kodiak Island, Alaska, to Punta San Carlos, Baja California. It is prized as a sport and commercial fish, and makes for excellent eating. Ling Cod can sometimes have green colored fillets. They're excellent, and will cook white. Some people won't buy the greenish fillets, but they're outstanding and many experienced seafood eaters prefer them that way.
Range of shelf life
Three to 7 days, depending on the quality of handling the fish has received.
How to store
Whole fish should be buried in ice with the belly cavity full of ice, since this is where deterioration happens most quickly. Adding ice to the belly slows this
enzymatic process.
